At the corner of a bustling intersection, Chinta Aguayo, originally from Mexico, is dishing out traditional cuisine from her homeland, behind the window of her vibrant blue taco truck.
Chinta’s Tacos and Catering in Tulsa, Oklahoma, has been in business now for three years, and among a sea of similar business, Aguayo said using fresh ingredients helps her stand out.
“Everything is cooked fresh daily,” said Aguayo. “Even customers tell me they come here because the food is fresh.”
Aguayo’s success does not come without cost – long hours and tedious work are a common occurrence for her.
“You know I get up almost everyday, almost five in the morning and come to my kitchen and start preparing everything,” said Aguayo. “Between the prep stuff, plus working in the truck it’s around 12 to 14 hours a day, and it’s hard work.”
However, she said all of the work that comes with the truck is well worth it to do what she loves working as a chef and business owner.
“I love what I do,” said Aguayo “It’s been a blessing to be able to be in business and I enjoy every little thing that I do.”
Aguayo offers a number of traditional Mexican dishes, and her truck is open Monday-Friday from 8 a.m.-8 p.m. and Saturday-Sunday from 8 a.m.-10 p.m. according to the Chinta’s Tacos and Catering website.
